Ingredients

For the Jalapeño Honey 

1 cup honey 

1 jalapeño, stemmed, seeded, thinly sliced 

For the Pancakes 

1 1/2 cups all-purpose flour, sifted 

3 1/2 teaspoons baking powder 

1/2 teaspoon kosher salt 

1 tablespoon granulated sugar 

1 1/4 cups milk 

2 large eggs 

3 tablespoons unsalted butter, melted 

2 tablespoons canola oil 

For the Buttermilk Fried Fish 

2 cups buttermilk 

1 cup all-purpose flour 

1 teaspoon baking powder 

2 teaspoons kosher salt 

1 teaspoon ground cumin 

1 teaspoon onion powder 

1 teaspoon garlic powder 

1 teaspoon ground black pepper 

1 cup canola oil 

4 thick, firm white fish fillets, such as halibut, halved crosswise
